Pyles
Author of the best selling The New
Texas Cuisine and one of the founding fathers of Southwestern
Cuisine. Bon Appetit credits him with almost single-handedly
changing the cooking scene in Texas. He has released his fourth
book, Southwestern Vegetarian, and is consulting, writing,
teaching and producing television cooking shows. Pyles was the
first Texan inducted into Who's Who of Food and Wine in America.

Kent Rathbun is the founder of Abacus, a world-class restaurant
in Dallas where he has developed a menu of New World cuisine,
drawing on Southwestern, Mediterranean, and Cajun/Creole influences
with an Asian flair. His creativity, dedication and range of
delectable dishes have earned him a national reputation as an
impressive and inventive chef.

Grady
Spears
Grady Spears worked as a cowhand and cattle broker before becoming
one of American's most celebrated chefs. He's the author of A
Cowboy in the Kitchen and The Great Steak Book. He
founded the Chisholm Club, a landmark restaurant and cooking
school in Fort Worth's Sundance Square.

Love
Tim Love is chef and owner of The Lonesome Dove, a Western bistro
in the Fort Worth Stockyards that combines the feel of the old
west with elegant dining. The restaurant has received national
acclaim, including praise by the New York Times for its
stylish Western theme.

Fearing's Lobster Taco
Dean Fearing was named one of America's Top 10 Young Chefs by
Food & Wine magazine. He is the Chef at the five-star restaurant
The Mansion on Turtle Creek in Dallas. The Lobster Taco has become
his signature appetizer.
